Our lambs are 100% grass-fed on our fertile grass / alfalfa pastures. But feed alone will not guarantee good lamb. That is why we have focused on a breeding program that is highly popular in the UK and Australia for grass-based sheep operations.
We use a stratified, 3-tiered breeding system to create a hybrid, heritage lamb that is hearty as well as delicious. We start with Scottish Cheviots and Clun Forest, which are part of a group of heritage hill country sheep from the border of Scotland and England. They have roamed these hills, practically unattended for over 500 years. Due to their lack of commercialization, they have retained their rich and slightly sweet meat. We cross with the premier sire of the UK, a Blue Leicester , to create a “mule” sheep. This mule is then terminally crossed with a Texel ram to result in the most distinctive and tasty lamb you have ever had. We are sure it will please the most discerning lamb lover.
Our lamb is available by the half or whole in fall only. Please click here to sign up and fill out a cut order form.
