Ingredients
SERVES 4-5
- Garlic powder (Straw Hat Farm’s preferably!)
- Paprika
- Chili Powder
- Cajun Seasoning (ie: Tony Sacharey’s…optional)
- Salt and Pepper
- 1 onion, sliced
- 1/2 cup dry white wine
- 1/4 cup white wine or apple cider vinegar
- 1 Pasture-Raised Chicken
Directions
- Preheat the oven to 325 degrees
- Coat the chicken with the first five spice ingredients. Amounts aren’t crucial, just make sure the chicken is well coated
- Put sliced onions, wine, and vinegar in the bottom of a dutch oven. Add the chicken
- Place in the oven for 1 hr and 15 minutes for a 3-4 lb bird and 1 hr 30 minutes for a 4.5 lb+ bird. The best way to check doneness is to use a meat thermometer inserted into the breast or thigh (make sure it’s not against the bone). Once it is at 165 degrees, remove and let rest for 10 minutes before carving.
