Jeff’s Melt-in-your-Mouth Chicken[ Print This! ]

Ingredients

SERVES 4-5

  • Garlic powder (Straw Hat Farm’s preferably!)
  • Paprika
  • Chili Powder
  • Cajun Seasoning (ie: Tony Sacharey’s…optional)
  • Salt and Pepper
  • 1 onion, sliced
  • 1/2 cup dry white wine
  • 1/4 cup white wine or apple cider vinegar
  • 1 Pasture-Raised Chicken

Directions

  1. Preheat the oven to 325 degrees
  2. Coat the chicken with the first five spice ingredients. Amounts aren’t crucial, just make sure the chicken is well coated
  3. Put sliced onions, wine, and vinegar in the bottom of a dutch oven. Add the chicken
  4. Place in the oven for 1 hr and 15 minutes for a 3-4 lb bird and 1 hr 30 minutes for a 4.5 lb+ bird. The best way to check doneness is to use a meat thermometer inserted into the breast or thigh (make sure it’s not against the bone). Once it is at 165 degrees, remove and let rest for 10 minutes before carving.
