Classic Herb-Roasted Chicken[ Print This! ]

Ingredients

SERVES 4 to 5

  • Garlic-Herb Rub (1 tbsp dried oregano; 1 tbsp dried thyme, 1 clove garlic, minced; 1 tbsp course salt; 1 tbsp  freshly ground black pepper, 2 tbsp olive oil)
  • 1 Pasture-Raised Broiler

Directions

  1. Preheat oven to 325°F.
  2. Rinse the chicken, pat dry with paper towels.
  3. Rub Garlic-Herb Rub into chicken and underneath skin. Place the chicken in a roasting pan.
  4. Bake for approximately 1 hr 15 minutes to 1 hr 35 minutes, depending on the size of the chicken. Use meat thermometer and remove from oven when internal temperature is 165 degrees. Let rest 10 minutes before carving.

Serve with rosemary roasted potatoes or garlic mashers
